Hmm... good question! So how would I answer it? Inevitably someone is going to approach me while I'm in costume, and with a strange look on their face, expect me to respond to this in a one-word answer. Best be ready for them!
If you had to think of a brief statement that sums up why you like Star Wars, what would it be? Can you even do it? I'm not sure I can... I'm looking for help here!
Let's see...
I'd say I like it for the story... the epic journeys of the characters... first Luke, and now Anakin, combined with the "space fantasy" setting.
Also, one-word answers would be:

When someone asks me if spending as much money as I have on my Jedi costume was worth it, I tell them, "Absolutely." I've never really felt the need to explain why, exactly, I like Star Wars. Usually, I'm the one asking people why they don't like Star Wars. I've loved Star Wars since I was 3 or 4. The reasons, of course, have changed over the last 19 years. I suppose that I'd have to say I like Star Wars because it is a terrific morality play wrapped up in the trappings of a sci-fi epic. That being said, Star Wars, for me, has always stood apart from other sci-fi series and films because, at its core, Star Wars is a fantasy and is not weighed down with the technobabble that is a mainstay of some series. Think about it: the coolest characters in the saga--the Jedi--use swords with blades of light energy! It's technology, but it still has a sense of fantasy and mysticism about it. Like Jauhzmynn, I believe that the theme of redemption is a large part of why I like Star Wars so much. In my creative writing class, we talked about why people like the idea of redemption in fiction. I can't remember the reason that we came up with, but I believe that it is because we like the notion that someone, no matter how far they have fallen, can be redeemed. But the real reason is, of course, the Jedi. They are the height of virtue and this dedication to such an austere life as that led by a Jedi has allowed them great power and wisdom. However, something that I have seen in Knights of the Old Republic II is that as powerful as these individuals are, they are not deities, and they are not infallible. Honestly, I like that. I like that men and women--and other things--who wield so much power are just as susceptible to succumbing to their own arrogance as the next person, or that they do not see through every plot that their enemies bring against them. They are the ideal, but even as such, they are human. Oh...yeah, that, and Ewan McGregor is sexy as anything! Err...I mean...

Something else I forgot to mention: Darth Vader. Hands down, the coolest villain of all time. Forget the Emperor, forget Darth Maul, or even Boba Fett. Darth Vader (and by Vader, I mean helmet, cloak, suit--David Prowse's Darth Vader) is an icon. If anyone gets a chance, do a search for 'The Heart of an Empire' and download the trailer.
In this trailer for this documentary about the Fighting 501st, you'll see this wonderful clip of several stormtroopers and Darth Vader walking into a childrens' hospital. Vader walks over to one of the kids--a little boy who can't be older than 8 or 9--and shakes his hand. The voiceover is the kid asking, 'Are you gonna stay?' Vader replies with, 'I'd be honored.' Vader might be a very imposing figure, but man, in the right circumstances, he can be downright cuddly!
I guess that's the other thing about Star Wars that I really like: the original trilogy may have ended in 1983, but it continues to resonate in pop culture, touching the imaginations of children born well after Return of the Jedi was released. So, to go along with these other one word summaries, I'd have to say that the thing I like best about Star Wars is 'inspiration.'

I enjoy seeing powerful people (Jedi) using their powers for the betterment of humanity/other sentient beings. Rather than acting like the leaders of many modern Terrestrial nations and religions who promote killing and defeating anyone who doesn't believe in the same things they do, Jedi protect all creatures great and small. They are guardians of peace and justice in the galaxy. As seen in the NJO, Jedi even protect the lives of those who have come to hate them (ie. Peace Brigade, etc.). Jedi are the most honourable people in the galaxy, and I hold them in very high regard.

I would say I like Star Wars alot because it allows me to escape my reality sometimes. And also because I not only the theme about good guys vs the bad guys storyline, but I also like how Star Wars epitimizes (hope I spelled that right) that no matter how evil or how badly you can "dork" up your life or others, with the love of one person, like Luke's love for Vader overall, you can still be forgiven and made whole.

I will tell you one thing, I hate Sci-Fi. I CAN'T STAND SCI-FI! It's soo wierd that I LOVE Star Wars, but I hate Sci-fi.
SO that being said, I like star wars because of their super l33t skills and there super cool sabers.

Star Wars is a fantisy thing not really "Sci Fi'.:-) More like a futuristic BeoWolf-esquce tale.
A friend of mine who's reading the thread over my shoulder, is a Star Wars fan too. He say she likes it because it's a story of Redemption. he's big into themes and Star Was is full of them. As a martial artist he likes the sword play, the quest for advancement weather it's internal or external.
Example vader's advancement to Sith Lord. An external which by episode 5 his personality shifted. Talking to Luke changed him more. (Luke saying there was good in him. This came true in episode 6.) Internal Obi Wan's growth as a person from episdoe 1-4. Three we haven't seen, but we know he's going to do some serious changes.
