Roasted veggies a favourite, also like to roast roots, carrots, parsnips and beets. Recipe for QUICK PASTA, In frying pan, Some E. Virgin Olive Oil, Add sliced oinions, Lots of fresh chopped garlic (to TASTE, I will use 1 to 2 heads, some people will only use 3 or 4 cloves) Saute till translucent, 3 or 4 min. Add chopped veggies in any of the following combos, Spinach leaves, tomatoes, mushrooms, olives, sun-dried tomatoes, artichokes hearts (marinated), bell peppers (red, green, yellow or orange) eggplant, etc. Add fresh basil leaves, some oregano,(fresh or dried). Done when veggies are cooked tenderish. Boil water cook pasta as usual, drain, put in large pasta serving bowl, Add veggies, top with more fresh basil leaves, and Fresh Grated Parmesan Cheese. Shouldn't take more than 1/2 an hour unless you're a slow chopper. I like to do this one on Penne or Linguine espially if it's Spinach pasta, even faster if it's fresh pasta which cooks in 2-3 minutes.
