I did note that there was no actual "battle"... that would have been difficult on a busy street... even just being frozen in action was cool.. I wonder who did the costumes for that... and.. it looked like most of the people in actual costumes were models....all the guys were too good looking to be ordinary people..

I saw some other versions and other postings about it on RL. It was actually billed as a "freeze mob", sponsored by the game company, so I suspect they ARE all models and the costumes professionally done.

Well, given enough Jedi, and an open space, we could do it.
Actually, the 'freeze mob' is a perfect way of handling it. Instead of waving sabers around and risking someone getting hit, you just pair or triple off and execute random poses every few seconds.
Actually, it would be fun to try a controlled game of Ninja in Jedi costumes.
'Ninja is a game I played (with a bunch of people much younger than me) late at night at the last DragonCon.
- everyone starts in a circle, one hands touching in the middle.
- everyone leaps back at once saying 'Ninja' and freezes in an artfully 'kung fu' type pose.
- going around the circle, each person tries to 'touch' another person. The person whose turn it is goes after someone else, but they're only allowed to move for a second or two. As soon as that person goes, everyone else can move, but everyone has to freeze as soon the person whose turn it is stops.
- it you get touched, you're out of the game and leave the circle.
- the game continues until everyone gets touched except the winner.
The game is basically 'Tag' with a kung-fu twist. There is some strategy to it, like don't freeze in a position where your hands or feet are sticking out, an easy target for the next person to go. It would look cool in Jedi costumes.

One of my coworkers at the costume store got the game and says it's a blast. Thinks I should get it, but I just don't game.

Yep was defo cool, would have been wonderful to have been there and unaware, then just have it sprung on you like that. Seriously considering getting the game, BUT lost 3+ years to World of Warcraft, and would hate to end up in the same situation of HAVING to log on every spare minute, and only surviving on a few hours sleep before work. Seriously tested our relationship. My wife Jemma played too but only on a 'feel like it' basis, whereas I ended up hitting it hardcore.
Just thought of a funny thing too, wonder how many of those playing as Jedi, actually know much about Jedi and their teachings and way of life? Most people I know think Jedi just run around chopping folks up with their (cringe) Lazer swords (/uncringe)......
