I also have another question about when I'm looking at ordering fabric online. Exactly what weight or ounce per yard should I buy for the outer tunic set for it to look approximately right in drape and such.

depends on what the fabric is. For linen I usually go with 5 oz or so.

5 oz per square yard sounds about right. You might go down to 4 oz, depending on the fabric but I wouldn't go any less, though you can always line a tunic if it's too thin. I have a robe made out of 7.8 oz per square yard wool blend and that is about as heavy you want to go for a robe and much too heavy for a tunic.
Denverfabrics.com lists the weights of fabrics and has good pictures and descriptions of what you want to do with it. If you don't want to line your tunic, I'd look for 'suit or jacket' weight fabric as the heaviest choice and 'dress' weight fabric for lightest.
