Some things to think about (not pushing ideas here, just opening the floor):
If we undertake lightsaber training videos for martial (fighting) reasons, then I think it may not be the correct media or forum. If the practitioner's (or instructor's for that matter) deep-down goal is to out-smack their opponent with plastic sticks, then I have to agree with Schph. You're pretty much need to train in person.
I believe we should treat any lightsaber training more as choreography rather than as a martial art. Work on visual cues, telegraphing, known patterns of movement, etc. Try to build an entertaining and exciting "dance" as it were, between "combatants."
Just learning how to "win" a saber duel does no good to the "loser" or the spectator, and only benefits one participant. It also can lead to the "Dark Side" of quick reactions, frustration, wanting to get even, and all those other feelings that can happen in a few milliseconds during a duel, and THOSE things can lead to someone getting hurt or seriously killed (and stuff).
Anyway, what *I* would like to have come out of this (ideally) is for the TJA to come up with some fake-combat saber patterns that would be easy to learn, easy to practice even without a partner, and easy to embellish on-the-fly, that could be the basis of putting impromptu battles together for cool photo-ops and to entertain spectators at events. Kinda make 'em think "wow, those TJA Jedi really know what they're doing with those lightsabers!"
I may be going out on a limb here, but as we are one of the (if not *THE*) top Jedi costuming organizations on the planet, how much cooler would it be to look the part while in motion, just as we do in repose?
Is all that gonna be a piece-o-cake? Maybe not.
Is it doable? I think so.
