Hey, I like sandwiches, esp. in summer time, though also looking to watch my calories and lose weight. Below is first one. Anyone else have their recipes? Add on.... JMD
Tuna Veggie Melt
1 tbsp fat-free mayonnaise 1 tsp Dijon-style mustard 2 tbsp chopped roasted red pepper 2 tbsp chopped celery 2 tbsp chopped green onions 2 tbsp chopped green chile 1 tbsp capers, drained 6 oz white tuna in water, drained 1/2 cup spinach, stemmed 2 slices multigrain bread 1 oz part-skim mozzarella, sliced or grated
Combine mayonnaise and mustard in a bowl. Add pepper, celery, onions, chile and capers; mix well. Add tuna, season with salt and pepper and toss gently. Toast bread on both sides and cover one side with spinach. Mound tuna mixture over spinach and top with cheese. Melt cheese under broiler and serve. Serves 2.
Nutritional analysis per serving: 230 calories, 6 g fat (2 g saturated), 19 g carbs, 5 g fiber, 28 g protein

Ohhh, stop, you're TORTURING me!
Aside from peanut butter and jelly, grilled cheese, egg salad, etc. I have absolutely no recipies for snadwiches...unless tea sandwiches count. There's this one cucumber sandwich that sound sooo good...

I have a sandwich I make thats made with crunchy peanut butter and banana on bread then you pour some honey over the banana and peanut butter. Then I grill it on a skillet like a grilled cheese sandwich and pour syrup over it and eat it like a waffle. It is the diet killer!

Chunky hummous on a really grainy bread with, with spinach leaves, thin sliced vidalia onion and a really fresh ripe NJ beefsteak tomato.
