There are defences and attacks to every position. You have to remember that star wars Lightsaber fights are showy and spinny and longer and flashy then they need to be. You can take many practical things to a Lightsaber fight but you have to at some point accept it as a show or use it's forms as a Kata(Dulon) for those who like the terminology.
Start with basics, 8 cuts and foot work and from there have some fun and be spinny, if you want real swordmans stances and what not work em into the routine but I don't do twils at Kenjitsu and I don't make my cuts fast and bring a lot of power when I'm dressed as a Jedi doing things. Know the type of thing that you want to learn and adapt it or simply go as freestlye as you want.
The closest they ever did for bringing real sword tricks was for episode 4 with Peter Diamond using fencing as the main aspect of the fight..........not the most exciting duel was it?..... hence why tree chopping and tenis strikes made it into the new ones.
