so i was watching attack of the clones, just because i had watched phantom menace, and i noticed a mistake on master windu's sabre on the battle of geanosis. every couple of seconds his sabre color turns from purple to blue, and back again. when i saw this i did a double take, it caught me highly off guard. did anyone else notice this?

Much like how Obi-Wan's saber in the fight between him and Vader in ep 4 suddenly turned purple for no good reason?

I noticed with the dvd of ANH, Luke's saber seems to change colour during his training session on the Millennium Falcon.
It goes from a blue to a teal (nearly green looking) and back to a lighter blue.

Look for this scene in ANH: its the shot near the end of the saber fight where Kenobi lowers his saber to block a blow. The scene is shot facing Kenobi, and the angle of his lightsaber is such that you are looking at the end of the tip of the blade. For a brief second (you may need to freeze frame it) you can see he is holding just the lightsaber prop! It is just a long, clear tube with pulsating lights, no special effects. It is the shot just prior to the one where they are standing across from each other in the hangar bay doorway where Vader cuts down Kenobi.

I always wondered why it was never fixed when they re-did the movies a few years back.

Well if you look at ANH the scene where luke is using the binoculars to try and find r2. A robot passes in front of them and if you look you can see it being pulled by a rope! That was never fixed when they re-did the movies either.
