Remeber that a more experienced jedi or sith is able to handle there weapon with one hand verses two. Remember in TESB that Vader only uses a one handed saber technic. He was the more experienced of the two. In AOTC Anakin used two sabers only using a one handed technic. So I would believe the more experience you have with your saber, the more control you have over it. Also how strong the force guides you to.
