Hendel, in the interim, while you're working on getting the undertunic neckline like you want it, try this tip:

Crisscross the neck so it looks neat and then pin it on each side to your bra about where the strap attaches. When you put on your tunic and tabards, you won't be able to see the pins.

My first undertunic was too large... I made "my" size without taking into consideration the stretchiness of the gauze. But I still wear it, so I pin the crisscross and it stays in place. (Actually the "too big" undertunic is the greenish khaki one in my avatar... like you could actually see it there... :
