Probably the neurons we excite when we think about Star Wars all the time. The remain active and when we dream, they hitch on for the ride...
I've had a couple of SW dreams. The last one I had I was helping local police fight crime... I had an orange bladed lightsaber (orange? I would've thought blue) and was using it to get into a house that was boarded up.
I've had others, but I'd rather not embarrass someone...
