I'm not sure if I read this or heard this in a dvd: Because the Jedi have "Jedi Sense"  -when they have a lightsaber duel it is at a blinding speed. When we see duels in the prequels it is as if we were watching them in slow-motion. If we were to actually see a Jedi and Sith dueling in reality their movements would be so fast we would only see a blur. Makes sense: both opponents are able to see the other opponent's movement just before it happens, and then counter, only to be countered again, and so on... I guess that might be what Nick Gillard meant by saying the Jedi are always in check: that every strike has a parry and every parry has a counter move.
