I guess you would have to ask George why he called them S-foils. My guess is that it just sounds more futuristic than merely calling them wings. 
Ahhh... that would be consistent with his line in AOTC, "I'm good at fixing things."
It would also be consistent with his character flaw of being a control freak; wanting everything to done his way and as he sees fit.
from what I've seen and read it seems Anakin toyed with everything....R2, 3PO, his ship, his pod-racer, etc.
