I think the main problem we are having about this is we are looking as if grevious is still organic. Grevious is not half machine like vader he is a brain with eyes and a few organs. He is more mechanical that organic, so there are numerous possibilites to explain why. When it says artificial arteries i assume metal tubes which in a way could be used as his wind pipe there for being much more durable that a regular meat one.
