Jedi Knight II: Jedi Outcast.
This game wouldnt be my favourite, if not for the modding opportunities: Ive downloaded an almost exact replica of the Naboo power room (imo best lightsaber fight arena EVER), and Ep III Obi Wan/Anakin/Mace/Yoda/Kit Fisto skins. You can create incredible set pieces with that game.
I played KOTOR, thought it was a tad boring, and just didnt fit the SW universe very well, I didnt find it believable. Havent played KOTOR II yet, that looks better.
I also dont like the fighting system; I want total control of my saber strikes
