I just read that article in The SW Insider about Palpy and the "hidden" face-
The idea was it was his evil face that was real all along- Palpatine's "good senator" face was his mask.
They referred to it as a "Dr Jekyll and Mr Hyde" theme but in reverse.
My guess is Mace deflecting the lightning made Palpatine weak and unable to maintain his "good" face, revealing his true self.
It would also easliy explain why Luke did not become deformed by the Sith lightning- he wasn't trying to maintain a changed look or mask.
