Hmm...very good question!
Personally I think it 'had' to be Ewan for only ONE shot that I can remember; that's when they're in the elavator shaft and Obi-Wan wakes up an finds himelf staring down the shaft.
As the others, it said in the 'making of' book that most of the time they used a dummy made up to look just like Ewan, and sometimes they even had digital doubles for both Hayden and Ewan, and probably even Palps.
