My latest tunic was made with the simplicity 4450 pattern (space knight or whatever they name it - it is the Jedi pattern without the name)
I 100% agree their versions of tabbards (shoulder armor?) are not great.
I myself made mine very simple and it is VERY efficient - plain straight piece of fabric sewn properly. You shouldn't have much problems having them look like you want.
