Linen can come in all sorts of weaves and from hankerchief weight, to light to medium and so on. It's the fiber that makes it linen, so I'm sure there is a weave in it that would look good on a Jedi. You can even get linen made from hemp fiber, though that's generally imported from Europe and not cheap. My usual gripe I have with linen is the wrinkling problems I've had with it.

I do have to iron my linen tunics after laundering. However, the more they are washed, the softer they get and the less they wrinkle while wearing.
I have a couple linen street skirts that are about 5 years old that now don't wrinkle at all. The same goes for an SCA tunic that's about 15 years old.
